This Sparkling Blanc de Blanc was made Methode Champenoise, where the wine is fermented in the bottle and riddled for months. This makes the bubbles smaller and more delicate. We get zesty lemon on the nose with subtle honey notes on the palate. It has lots of minerality, and has a clean long finish.
